I find the key is to use a little bit of several things to enhance the flavor. Too much seasoning does not enhance the flavor of the meat, it hides it under the flavor of the seasoning.

I have been cooking for about 45 years and learned from some good teachers as well as my own experimentation, trial and error. The hardest thing is to be consistent. Sometimes I'm great, other times I suck. A lot depends on the quality of the product. Hard to find really good meat, fish, seafood etc these days. Got some Kosher bone in, skin on chicken breasts from Trader Joe's a few days ago. They were awful. Not sure what they did to them, but the texture of the meat was rubbery and they had no flavor.
I know I did a good job seasoning and cooking them but we didn't eat more than a few bites and threw them out. PB&J for dinner, yum...

Here's a lesson in beef. You don't want feed lot beef. Too much bug killer, preventative antibiotics and stimplants (growth hormones) Beef cells will be large and distorted. Color has probably been changed with nitrogen. Grain of the meat will appear looser.

If you feed corn you will get a yellow tinted fat. If you feed oats, it's snow white.
