Unfortunately in South Jersey, rural means poor (like it does in much of our country).

Not true, however, in Hunterdon, Morris and Somerset Counties. But as the old saying goes you get what you pay for.
Where did you get that from?

Since no one mentioned Sussex County, I guess I might as well. Their slogan has always been "people and nature together". It is very rural and mountainous, with some of the most beautiful views in the state. That said the "rural" of it is mainly woods and lakes, but there is enough farmland up there too. It is certainly cheaper to live there than Morris, Somerset or Hunterdon Counties too, but it is not a poor area either. A lot of good respectable people live there, much like Upstate NY.

And to the person that said Gloucester County is like the Bergen County of South Jersey, are you on something? They could not be more different. I mean, portions of Camden County have that "boroughitis" thing going on with the Haddons, the Audubons, Collingswood, Bellmawr etc all those little towns, but that is really the only similarity I see. And in my experience, once you get south of Camden County it is like redneckville. In Gloucester, Salem and Cumberland Counties you could swear you are in Alabama.

Moorestown (Burlington County) - 39
Cherry Hill (Camden County) - 57
Voorhees (Camden County) - 86
Haddonfield (Camden County) - 11
Point Pleasant Beach (Ocean County) - 58

Not very good
There are perfectly good school districts in South Jersey beyond the Philly 'burbs. The OP should ask in the subforum.

This website is called "city-data". Data means numbers. If you want to find facts it's full of them.

Look at percentages of high school graduation rates, look at household income, median house value, crime.

It's all there for you.

You'd want to look around Woodstown in Salem County. Welcome to Woodstown, NJ

Try Vernon, NJ and Newton, NJ in the northwestern corner of the state. South Jersey is too boring and plain.
