Edgewater is nice place, but commute to JC would be not very good - you will need more time through Hoboken. JC has nice appts and would be easy to commute.
Harrison is nice. I currently rent in one of the newer apts (one year), and I really like it. In the next year and half, there will be a whole foods within walking distance (granted, it's a 20-25 min walk); however, I bike to the university area in 8 minutes flat. With all of the development in Newark (central biz district, Ironbound, and the university area) and in Harrison... there will be a lot going on. Another plus with Harrison is the safety. If you look at real estate crime maps, Harrison is entirely green--meaning very safe. Being so close to the Path Station is great because it runs 24 hours, there are very little safety issues, and you're in lower Manhattan (WTC) in 18-20 minutes. (You're also walking/biking distance to the Ironbound and downtown Newark. (I too would ditch the car if you're primarily going to be in the city--NY. I got rid of my car a year ago (and, I had had a car for almost 20 years) and with the PATH, my bike, uber, ZIP car, and the taxis--which the taxi station is just right next door to the PATH station... you can make out really well).
Paulus Hook is close the Grove St area which has a gay bar called Pint and another sort of gay friendly restaurant/bar called LITM. Jersey City east of interstate 78 is where the young attractive people live and hang out walking dogs or pushing strollers.
Personally just not a fan of Harrison as it still feels underdeveloped and isolated. The people there are less attractive on average.
Can't comment on Edgewater aside from I don't know a soul know lives out that way. Big downside to me personally would be difficultly getting to NYC on short notice or weekends.
