You should check AirBnb and Homeaway for short term rentals near your location. Uber and Lyft are here and probably popular enough in Princeton, since it's a college town.
Princeton is home to Princeton University, an Ivy League school....and it's very nice. Not all that different from the vibe in Seattle, just much smaller of course.

I would have to, unfortunately, keep the property in Seattle for many reasons.
I would also need to now think of things like food/dietary requirements since I don't drive and unsure if places deliver groceries there.

In Princeton? I am quite sure you can get grocery delivery there. This is NJ. We are very advanced compared to Seattle.. We've been civilized far longer than they have, of course.
I used to work right in that development. I don't mean to be negative, but I have a hard time imagining working and living around there without having being able to drive. It is so car-centric. There are a lot of apartment complexes on Plainsboro Road. (Fox Run, Deer Creek, Hunters Glen) They are sort of walkable to a store I guess.
Some condo/apts in Plainsboro are affordable by NJ standards. Princeton Meadows, Quail Ridge, The Crest have 1B/1B units for 1-2K month. Local public transportation is limited.
I suggest you also take a driving course starting right now so you can learn to drive. It's a big country and the infrastructure isn't really there for public transit or Uber to cover all the gaps.
The other situation is that Village Blvd in Plainsboro, not Princeton, is not close (walkable) to anything but maybe Ruth's Chris.

While the mailing address might be "Princeton", that location (Forestal Village) is actually in Plainsboro, and--aside from Ruth's Chris and the Salt Creek Grille--there is really NOTHING in the area to which one might be able to walk.

I also cannot imagine living and working in that area without a car. Somebody who is car-less in that area will have to call a taxi or an Uber for every errand outside of their place of residence.
