Looking for single family house or townhouses between 200 to 300K
Not planning to have kids so school shouldn't be a huge "factor"
We're the type of couple who prefers indoors rather than "outdoors"
Preferably an area where I can shop for chinese asian food
Close to a major highway like I-95
In an area close to major pharmaceutical companies and hospitals

Best authentic Chinese food is in the Edison area. Location wise, it is central NJ, so you can commute north in approx 45 min for pharma jobs, or go down to Princeton in the same 45 min.

I can't put those things together for you without doing a lot of research. Find the pharmaceutical companies, look at the major roads on the map, search for Asian markets. When you locate an area which might work, start looking at real estate prices. Hospital locations and ratings can be found online, too.

I think the 200-300 price range might be most limiting.
Agree that Edison could work and if schools are less of an issue then Ewing Hamilton might work. There are Asian markets around, and West Windsor and Plainsboro definitely can provide that- still quite drivable from Ewing and HAmilton. The home prices in Ewing and Hamilton will definitely be more friendly.
