We are moving to Texas. I wanted to get something that you can only find in NM. Just as a gift for new boss, friends, etc. Any suggestions? Maybe green/red chile?

Hatch Chile... Green Chile, from Hatch, NM. I like 505 brand of greene chile sauce.

Looks like Hatch is pretty famous. But does it only can in cans? I think chile in jars looks nicer and is more suitable for gifts. Where can I get 505 brand chile? I saw people mentioning Bueno. is this a good brand too?

It comes in Jars. You can probably get 505 Chile at Albertsons or Smith's. My wife says she buys it at Costco. Here is the 505 web site. fiveofivechile - Home

I also like Cervantes, Sadies, Monroes, Pedros... All local New Mexican brand. Bueno is a large local brand...

GregW - do you live in NM or NH? You know a lot about the SW desert for someone living in New Hampshire.

Ive seen 505 chile at Walmart too. I love that stuff, nice and easy when you dont want to make anything. Ive only ever seen Bueno in tubs, its pretty good though and I put it on everything.

If you are buying chile, as a last resort buy from Hatch. Much tastier chile from Cental NM. Look for chile from Lemitar, Belen, Los Lunas and Corrales. Some very tasty chile from Chimayo also.

The most important thing to take from New Mexico is a good reason to come back.
