To me, good, fresh green chile is one of my favorite things in the world. But... not all chile is made the same. Many are just - meh, OK. But when you get the good stuff... heavenly.

This past weekend, the NMSU Alumni chapter in DFW held their annual chile roast and roasted 59 cases of NM green chile. It was all pre-sold to alums who stopped by all throughout the day to pick up their chile - and maybe stop a while, have a few cold cervezas and chat with fellow alums.

The smell of the roasting chile was intoxicating. A very big hit for a lot of displaced New Mexicans living in the DFW area (and for a few walk-up Dallasites who purchased some extra chile sold in gallon bags).

Just picked up 2 bushels of roasted HOT hatch from the chile roasters & froze it. What a great time of year!

Default Love of green chile is not confined to NM

Texas has a thing for that long green pod, too.

Fresh, chopped in salsa, or cooked as chiles rellenos, it's all good.

Let me tell you something. I'm from NYC and thought I knew it all when it came to food . The first time I had a green chile cheeseburger at the Owl Cafe in Socorro, the heavens opened up and I saw angels singing. And, they had the nerve to ask for a bite of my burger - I wasn't sharing ... It was that good. This is no hype. If you have a good New Mexico meal prepared well with red or green chiles it will be unforgettable experience. Plus, they're healthy eats too!
