New Mexico old-timers: what are some of the things you do with your leftover turkey? I'm thinking the obvious is enchiladas. What else? No, fancy schmancy gourmet stuff please (or something you pulled off the internet or out of a magazine). Prefer something your grandmother makes or made.

thanks for asking this. I am interested to see the replies. I always make a turkey, barley, and vegetable soup with the stock I make from the carcass (its in the crockpot right now) but I am not native New Mexican.

I always make soup and stock from the carcass. It is so simple to do and I freeze enough to last almost all year. I do the same with prime rib at Christmas and if I also cook a ham I make split pea soup. Homemade soups are so much better than store bought.

Other than turkey sandwiches, I make turkey and dumplings, turkey pot pie, and turkey casserole with the stuffing, potatoes and gravy added.

We take equal parts shredded turkey, stuffing and sweet potato mix together and heat and serve with bread and turkey gravy. The perfect leftover one dish meal. In New Mexico I would use Green chillies instead of potato. I may anyway.

I do something similar and my wife calls it "Thanksgiving Pudding".
