Okay, so if the holiday pay(bonus) is something you receive every year as part of your salary then yes that will be counted. If your overtime is only due to the pandemic and is not guaranteed again then technically it should not be counted.
Your employment verification form from your employer or a notarized letter from them explaining this can help you.
For an update, I haven't heard back, even with my follow up email asking if they have received my documents and for any updates.

Yeah, I still have not heard back. I am quite surprised it is taking a while, especially with COVID-19. I would think this process would be much quicker.

yeah this is crazy i called again about a month ago and they said the same thing, no one has started reviewing documents you would think because its a re-rental the process would go quick but its not. even the new buildings are moving faster than this.
