What are the best New York City-related edible souvenirs that are travel-friendly? Something that can last at least 6 hours without freezing or refrigeration. Is there a famous NY candy or something, the way See's Candies is for LA?
Not exactly like See's, which I used to beg people for. I have friends how love me to bring bagels and bialys. Or Greenberg brownies. Maybe Jacques Torres candy? Or there's a wine shop that specializes in NY vintages.

Ooh, I'll definitely check out Greenberg brownies and Jacque Torres candy!
William Greenberg Jr. Desserts on Madison Avenue, and Bruce's Bakery on 6th are good bets for black and whites. You can usually get the smaller size at both bakeries, though Bruce's can sell out, in addition to the large. Wm. Greenberg also has festive colors as opposed to the traditional black and white.
You can also find them at Zabar's as well as the small S&S cheesecakes. The large cheesecakes can be ordered from the factory, saving a trip to W238th Street.
For bialys, I would go to Kossar's.
