In New York and most other states formal change of name requires a court order. Those records are considered "public" and therefore can be accessed by anyone paying a fee and doing a search of court records. In addition at least in NY you are required to publish notice of your change of name via court order in a newspaper. Given Google and the rest of the world's search engines gobbling up any and everything that is in the public domain, it would probably only be a matter of time before such information appeared in their servers.

Those "wehaveinformationonanyone.com" websites are in the business of collecting public record data and compiling reports. So there and in answer to your general query in order not to be *found* you'd have to avoid anything that causes your name and or address to become part of a public database. Easier said than done these days, but perhaps doable.

Don't register to vote, don't have a driver's license, don't be taken to or involved in court actions, don't marry or divource, don't commit crimes and or be arrested, etc....,etc...., etc....

The answer is no to googling your new or old name and coming up with the other one. But what is the big deal. Everyone that knew you before the name change is going to know you changed your name, and they may mention it to people you meet afterward. That is something you are going to have to deal with.

How many times has Sean Combs changed his stage name? I can't remember. So who will really care.
