One thing that I have done for a few years and that have gotten great responses from folks is to get a ham (I prefer Wegman's brown sugar cured one for $1.99 a lb.) and then smoke it for 2.5-3 hrs. Nothing crazy, just rub it with some honey Dijon mustard, sprinkle with brown sugar and toss a bit of whatever dry rub you may have on hand. I smoke using a barrel smoker with Stubb's charcoal and applewood chunks. Smoke at 250-275. Great consistent results and everyone really likes it. And for $15-20 all in, it's a great deal.

Figured I'd update the post above since not everyone may already have a smoker (but may be inclined to get one...). I have had the barrel smoker from Lowe's (Home Depot carries the same as well) for a few years and it has turned out some great ribs, brisket, ham, etc. For about $200 all in, I think it's the best non-electric option for anyone out there. Couldn't find same exact one I have but the link below is to a very similar one. Sure, there are a ton of choices out there, but for the price, this one is hard to beat IMO. I have since added wireless temp probes, made a couple modifications to the smoker itself and it's working like a champ.
