Vacationing in Hawaii for 7 days. Should I go to Honolulu?

This is apparently your first trip to the islands. You probably fall into the group of folks who make Waikiki their first trip destination. I have heard comments by people who dislike Hawaii, giving the reasons of "nothing to do, walked from the hotel to the restaurant, to the beach and back to the hotel.... boring" Well it can be, but there are also is so many fun things to do on Oahu if you just plan a little. I think that is the key. Air fares will take a big bite out of your budget currently, but you can still have a fun time there and staying within your budget.
We are returning to the islands for visit number 18. We pretty much stick to Maui now as we find the last part of your expectation of Hawaii, walking around and seeing things. That is what we really enjoy about Maui, beach strolling, talking with people, snorkeling and seeing scenery. A car is almost a must on Maui however.
A note to the timing. I didn't pick up on the time of the year you would be traveling. Remember "S" in Hawaii stands for both South and Sunny. While a north shore Bed and Breakfast would be great in the summer but perhaps a bit stormy in the winter.

Mauibeachbum has a good point, the North Shore during the winter is usually heavy surf and if you want to swim in the ocean, somewhere such as Ala Moana beach park near Waikiki or Waikiki beach would be a much better choice.
Waikiki is good fun, you'll enjoy it. It has become very touristy, but hey! You're a tourist! Enjoy it! A lot of folks have spent a lot of time making sure it is a fun experience for tourists. And it is, we go play tourist occasionally, too, since it is good fun. A bit pricey to do the total tourist experience, but you don't get to Oahu all that often so splurge a little and have a great vacation.
