I have a big bag of Sand Plums in the freezer. Google give me contradicting information on how to make jelly with them. Does anyone have actual information on how to proceed with them?

My mother-in-law made jelly from sand plums harvested at her farm and one I found where I work; her recipe was 2 cups of sugar for 3 cups of reduced juice, plus a touch of pectin to firm it up. I don't know how she extracted the juice, but her jelly was very good, not as sweet as some recipes I've seen or had.

Down here in the SW part of the state and across the river in the Wichita Falls area, the sand plums are flowering already. I also saw flowering thickets near Chickasha and even OKC this weekend. Seems a little early, especially since a freeze is forecast in about twelve days.

generally at most go for a 1 to 1 ratio of sugar to juice. I prefer a bit more of a tart jelly so I do 3/4 cup sugar per cup of juice, which is really close to what SluggoF16 suggested. For the plums around here that works out so the jelly has a nice tart/sweet balance.

There are several varieties of "sand plums" so you might need to experiment a bit.

Justanokie - thank you so much. Cover them with water, bring to a simmer and squeeze with a tea towel? I do not have a food mill.

I would just put enough water to prevent them from burning, then boil them till they pop and then mash them up. Line a collander with a few layers of cheese cloth, place over a big bowl and pour everything into it an put it in the fridge after it cools. Should be drained off after sitting in the fridge for 24 hrs. I have seen my great grandma do this. I imagine a single layer of tea towel or muslin would work the same.

Get a couple junk cars on blocks to decorate your front yard.
