I love Orlando but you might also want to look at Tampa, it's a bigger city and there might be more opportunity. Also there is a small sleeper community called Tarpon Springs that has a large Greek community and it is a beautiful place. It might help your wife to be near folks who remind her of her home and community? I would suggest coming to visit first and see many areas of Florida.
Since you have a college degree and a sales background, I think you'd probably be able to find something and work your way up. You may have to start at a low level but the college degree and hard work will open doors.

If you have your heart set for the Orlando area, the theme parks might make a good start, it's low pay but I have family who have worked there for years and have done really well with them. Good luck!

If you decide to find a job as a salesman at the dealership, you don't have to worry about discrimination at all, not even in upper management positions. Staff in most of the dealerships is very diverse. However, they receive pay based on commission and it can be tough, as if you not selling you will be struggling. With your sales experience you may not have that problem. As for Greek community, they have a church and yearly festivals, but as far as I noticed they don't stay aside but they are mostly Greeks that arrive here long time ago, so they may only help you blend in and find a job.

I lived in PSL... it's a trek to Orlando and a pretty costly roundtrip (turnpike tolls + gas = $40). There's also no work in PSL either!

If you want a lot of Greeks and plenty of jobs - I think Toronto and Sydney/Melbourne might be better for you.

If you are set on Florida, I'd also give West Palm Beach a try. The weather is perfect (Orlando is chilly in the winter and also much cloudier) and great beaches are everywhere. Central Florida is kinda of "hickish" compared to South Florida. Orlando is not very multicultural IMO. Yes, there are plenty of tourists but they are week-long transients and barely leave a mark here.
