Of course she can do that. I do books for a construction company and the owner has himself on payroll. He's at the single rate so more taxes are taken out. He's married.
It's all about the rate - it's not like you'll get in trouble because you put on your W-4 that you are wanting to have taxes withheld at that rate if you are married.
You can redo you W-4 as many times as you want through out the year. Just fill out a new one and submit it.
I have to pay estimated taxes throughout the year because I have my own company. I'm constantly checking all year as to whether or not I'm hitting my mark tax wise. You can do the same thing too with all the tools available for free online.
