Kevin Binkley's new restaurant recently opened in the former space that was Bink's Midtown. It's now a $160 per person, 22 course, fine dining "experience" for 150 diners per week that pre-book tickets, similar to Alinea in Chicago. It's a minimum of $85 for wine pairings plus a 22% service charge. You're looking at about $600 per couple with wine.

I like the idea and am happy that we have such talent here in the valley. I just wonder if it will work here. This clearly isn't Napa or NYC where this type of dining is more commonplace. Will enough people shell out that kind of cash, even if the meal is amazing? I'd like to at least once. I hope it's a hit.

I am sure there are some here that would pay that but...I am not one of them. When I was single we used to do hosted Chef parties but it just doesn't seem that important anymore. I am quite sure I am not their target market though.

We have one of the better dining markets out there, it's why some of the larger chains do beta concept testing for restaurants here.

I'd do it, but it sounds like something I'd take clients to rather than go myself.

You can get to $300 per person at some of the top resort restaurants (Bourbon Steak, probably J&G) when you include wine. I think this concept should do fine January-April when it is peak tourist/snowbird season, but it's going to be tough in the summer.

He may also need some awards (AAA five diamond, Michelin, etc) to keep the place busy.

We went once to Bink's Midtown and were underwhelmed. I might consider the concept if it belonged to someone else, but not this guy.

The correlation was to their similar ticketing systems, not their pedigrees as chefs.

Understood, but I'm sure based on the number of items in the tasting course, prices and reservation model Binkley would certainly love to have you think they are both cut from much the same cloth.

Actually I'm more impressed that they brought in someone formerly from Charlie Trotter’s to run the front of the house.

22 courses, who can stuff 22 courses down in one sitting. And then have to ask for a doggy bag, ooh so tacky.
For $600 per couple we can eat 20 decent meals at our local mom & pop café and be stuffed with a 6 course meal.

There's the real Achatz connection! Funny. Impressive though. That guy earned his stripes at one of Chicago's finest so service should be top notch.
