I did look at a few threads here and didn't see any answers so here goes.

Can anyone give their experiences and impressions about sub teaching here in Phoenix and the West Valley as a second career before retirement?

It seems relatively easy to get the AZ Substitute Certification.

How is the job market and availability here?

Plenty of availability and from what I understand, the standards are pretty lax. My wife did it for a while (licensed teacher, BSE) here and there and I think the daily was in the neighborhood of $75/day.

I was getting 85 at Wilson in 1998-1999, and 90 at Alhambra on day 40. 131.05 at Tucson Unified in 2001, on day 41, including the ten bucks for an extra class. Hasn't gone up a nickel since, but you can get about a 100 in most of Phoenix. I have three, expired, six year AZ Sub certificates. I used it to get hired by a tutoring company y, and was assigned five hours per day at a high school, prepping students for AIMS Math(s), until 2012. That was a lot more actual teaching. It is a minefield out there, go with you gut, and stand your ground. The economy is getting well enough that they really need people. The best districts are often not the best places to work.

Only a teacher would quote take home pay...always trying to get sympathy. Reminds me oif an editorial in the Nogales International. It stated that they had been reporting low teacher pay for longer than anyone there could remember. However, they felt it was fair journalism to point out that a local teacher with a BA earned double what their degreed reporters made, who had to continually write about the plight of the poor teachers. Sure beats the heck out of a call center.

The one math class Elementary Ed majors take is not much of a foundation to plan for the future. In fact, it isn't a good foundation to teach how to plan for it, either. Better to just beach, moan, and dress like Fred Flintstone.

That is fine, my wife was working with CUSD in Chandler. She was signed up as a Substitute Teacher and a Substitute Nurse. Going rate in CUSD is $90: https://chandler.tedk12.com/hire/ViewJob.aspx?JobID=160

When trying to guesstimate her take home I figured $75 per day they needed her. She has a full time job so not an issue now but if we want to talk teacher's pay...

CUSD starts at $40,100.00 and tops out at $78,339.00. If you get a Masters, they will increase your base by $1000. If you get a PhD they will increase it an additional $500. https://www.cusd80.com/cms/lib/AZ010..._2017-2018.pdf

The better areas get away with paying less for Subs. 40k doesn't deserve much sympathy, IMO. Much better than making 50 in DC or LAX. I won't look admin pay, I already know they are pigs and half the money doesn't make it to the classroom. 200 school districts? Could eliminate half quite easily.

Any four year degree and a fingerprint card. The rural areas allow a GED, and get them emergency credentials, but they somehow linger for decades, depriving the students of an educated replacement.

My kid just went through the process and it's fairly easy. You will also need transcript(s) from your college and they must be hard copy at least for Maricopa County. The hardest part was ponying up the $60 fee to the county to be "certified" on top of the fingerprint fee.
If I remember correctly the out of pocket total was about $100 +/- depending on how much your transcripts cost you.
It looks like there's no shortage of sub jobs, and you're right, they don't really seem to care what your degree is in.
My kid got a job the day after getting certified (2 Bachelor degrees in the arts) teaching a P.E. class at $75 per day. Doesn't matter if it's 2 hours or 6.
