If you lived in Gilbert, Chandler, would you drive to Scottsdale to have dinner at a good restaurant? go shopping at fashion square, etc.? Also, vice versa...
or
do people generally stay in their own town mostly...
Both. The chains and movie theaters are everywhere, so you don't need to travel from Chandler to Scottsdale to, for instance, go to a PF Chang's or a Cheesecake Factory or to a movie. But there are small, independent restaurants that people definitely do the extra drive to - Pizzeria Bianco, Cibo, Fate, Il Posto, Sushi Brokers, Chelsea's Kitchen, Vito's, Elements, just to name a few. And certainly, though Chandler has a fairly nice mall, people do go up to Scottsdale for the more "upscale" shopping to be found there.

I notice from other postings that you're from Chicago - it's kind of like the Woodfield Mall and Michigan Avenue. Yeah, you can go to Woodfield Mall, and for most purchases, you're probably going to go there because it's more convenient. But for the really upscale stuff and the ambience, you're likely to go the extra distance to Michigan Avenue - which Scottsdale's Fashion Center is roughly the equivalent of, at least in terms of the shopping.

Phoenix doesn't have a "center" like Chicago does, so people do have a tendency to drive from place to place to get to various stores and restaurants. It's interesting, though, that a lot of the independent places are beginning to cluster in and around downtown, especially along the light rail track - and if that happens, Phoenix will have a downtown center of indepdendent restaurants, high rises, and shops surrounded by more suburbian shopping centers - a real city. Which is an exciting prospect.
