The stabber was shot dead by an off-duty officer who was obviously carrying. Will he be charged with illegal carrying of firearms? I am almost certain that the mall was a gun-free zone, and I don't think that being an off-duty officer would make a difference.
Depending on the State, signage may not have any legal weight. I do not kow about Minnesota.
We have open carry law in Pennsylvania but people carrying have been ushered out of the mall. This just shows the fallacy of gun free zones. In the end, someone violating the law is credited with saving lives.

Perhaps they should have added "knife free zone, no knives permitted in this business establishment". That would have prevented this tragedy, no ? We all know the knife was the problem here, right ?
More than likely it is a private property owner who can have a no gun policy on a place like a shopping mall, but that doesn't make it illegal. Being a police officer I assume he/she had either a concealed carry license or is exempt.
Might want to ask this in the MN section. Local gun laws vary too much in this country.

I've read that the mall allows carrying in the concourse area but most stores ban them.
Yes, this guy was a current officer which may allow him to carry in most places despite the signage as that is the case in most states. He is also a certified trainer and competition shooter.

Just curious, would you want to see him charged?
