No comparison, local maple syrup is what we use at our house (the other stuff is pure corn syrup). I've been to a few "syrup stirring" parties at a friend's farm, where it is slow cooked in an outbuilding over a low fire and stirred with long paddles. A lot of work, but it comes from their own trees and it's delicious.
