Our county heath department provides covid stats five days/week. They also provide other information about covid spread in our county.

They have very specifically stated that the hospitalized in our county are unvaccinated folks. These are hospitalized due to covid.

I'm not quite sure I'm following.

If 'm understanding this correctly, people who were vaccinated against a particular form of a disease are getting a new variant for which the vaccine was not designed? And you think this proves something?

That would just provide evidence that if enough people would have been vaccinated early enough, Delta wouldn't have developed.
