If he's going to re-popcorn the whole ceiling in that room, you won't be able to see the patch.

We had a hole in our ceiling from investigating a leak and we only popcorned the patch and you can barely see where it was. A uniform re-popcorn of the whole room won't leave a trace of the patch.

A few questions:
What has caused the need for drywall repair/replacement?
Do you like the popcorn ceiling or want to get rid of it? (you said your house was new, so that would lead me to believe you dont mind the popcorn).
One recommendation would be to go for a patch and repair now (with multiple coats of mud the patch can be feathered in so you can only tell under spotlight), live with it for awhile and if you don't like it in 5 years, then replace it.
Tearing it down is a much larger mess than patching the hole.

They can use 45 minute mud and do 3 coats in a day. For my basement finish, drywall was delivered to the driveway on Tuesday evening. They had all 90 sheets of 4' x 12' hauled around to the backyard, installed, taped and mudded, ready for paint by Friday night (1500 sq. ft. of floorspace) and using a combination of 45 minute and 90 minute mud.

Patching sounds like a more reasonable approach.

I had several holes cut in a ceiling to wire recessed lighting and the drywall guy used the same popcorn spray equipment as the builders and you can not tell where the repairs were. Same with the holes in the adjacent wall.

Good drywall contractors can work some magic.

Not sure when your house was built, but there is asbestos in some popcorn so be careful with that. Personally I would tear it down myself and rehang. Let someone come in and finish it. At least tear it down yourself. A drywall saw, hammer, and some contractor bags is about all you need.
