We are still testing out Indian places, for ITB it's Taj Mahal and outside we like Nazara, and Himalaya Range for Nepalese, but those are obvious choices and we're just scratching the surface after a few bad choices
Did't care for Kai or Ajisai as they are not traditional and no Japanese work there unlike Sushi Tsune and Waraji, both of which are good and authentic. If a place serves the Miso Soup before the mains then you know you're not in a trad place - it's not an appetizer, it's an accompaniment. Plus technically you wouldn't normally get a spoon for it. But either Kai or Ajisai sit between the other two and the likes of Mura and Cowburger or any number of Westernized Sushi places with weird mayo and spicy concoctions.
Agree with the others on St. Jacques for upscale and Coquette for a bit more casual, both are quite good for different types of occasions. Am looking for their Italian counterparts as we didn't care for Vivaci or Viva.

Umm......I went to Kai 2 weeks ago and it looked like all the people working there were at least Asian. Point taken that it's not 100% authentic but I would say that there are ton of Chinese people running restaurants around here that aren't authentic either because they need the Americans to come in as well I think it's still a way better sushi place than some of the other Americanized places around here like Cowfish that everyone goes to.

Agree that Ajaisai isn’t “traditional” Japanese, but I found it to have exceptionally fresh, high quality sashimi, which is what I look for in a sushi place. That, and the real wasabi (ask for it). I’ve eaten at some of the traditional places where the sashimi has been questionable, including one of the ones you mentioned. I’ll have to give the other a try...
If you are still seeking an Italian place, try Bella Monica in the Olde Raleigh neighborhood near Rex Hospital. It has a casual feel and excellent food. My wife also mentioned Babymoon on Airport in Morrisville.
For sushi, my current favorite is M Sushi in Durham - but don't make it over that way very often. Kai does an acceptable job and is closer to home. The parking lot sucks though.
Recently have been going to Poke Burri - their rolls are very good!
For Indian, try Azitra. We went for lunch recently and they had several mild options. I’m not sure the Indian restaurants can accomodate special orders much because this kind of food requires relatively long preparation, simmering in a sauce and such. It’s just not something that can be quickly prepared to order.

Every Indian restaurant I've been to has always offered mild, medium or spicy for at least some dishes. Maybe not the really spicy ones that are already made. Things like butter chicken are mild.
Nazara in Cary is the best Indian buffet around here that I have tried. I keep going back and have never been disappointed. Problem with this for you is that, as a buffet, you can't control the spiciness of the food. Some dishes are quite mild while others are definitely not.
I personally like Dharani in Morrisville and the Dharani Express in Raleigh. I have issues where I cannot eat overly spicy food, and they have been able to meet my needs. I don't go to buffets as I only like to order off of a menu, so their dinner service best suits my needs. Obviously, you can't order chettiand and vindaloo mild, but their dosa game is great and I can't get enough of their palak paneer.
I love Waraji and Sono, but I can't always afford them. Often I will go to Wasabi in Cary because of the variety, cost, and the staff are always nice.
