I've only ever seen trout fillets here. Can anybody guide me? I tried Earp's, etc. But they only had "sea trout" which isn't the same.

It was from a farm, in the mountains, like North Carolina's commercially available freshwater trout. You can't commercially fish trout streams anywhere in the US that I'm aware of, and if it were legal it would be difficult to be profitable given the physical constraints of trout streams.
Harris Teeter shows on their website having whole Rainbow Trout (fresh farm raised.)
