All, I struggled with what to fix or where to go for dinner tonight. We are staying in more these days so I'm looking for some inspiration. What did you make or where did you go for dinner? Would you make it/go there again? Thanks, Me
Sauteed red and orange bell peppers, baby bellas, and fresh garlic in hot sauce and red wine vinegar and added a dash of cumin and coriander. Just as it was finishing, I put in some fresh spinach. Stuffed it in a wrap and added some pinto beans; mashing the beans to make the wrap stay shut. It was easy and tasty.
I make a killer meatloaf, and it is even easier to make now that I have my Kitchenaid stand mixer (received it for Christmas). We had the meatloaf with fresh steamed asparagus.
Normally, we would have had this with homemade mashed potatoes, but we were a little late getting home this evening, so we bypassed the potatoes.
