Its spendy. Usually there is some good butchers or grocery stores will have it.

Once its prepped kosher salt, pepper, onion flakes, and rosemary place on cookie sheet fat side up. Make sure the oven is preheated as hot as it goes, 450 degree or so.

Place in oven with heat run up for 15 minutes, turn the oven down to 250 degree and leave alone for however long, usually 13 minutes per pound meat. If you use an internal meat thermometer remove from oven once temperature reads 140 degree in the center.

Pull out of oven let rest for 10 to 15 minutes to carve up.

I do mine in a Webber grill.

You can find them at a resturant supply store - usually they are fairly big though. Not sure about the grocery stores around here but the Commissary has them for $6.96 a lb..

Mmmm delicious sounding.

I would like one of those webbers. I should have my sis look in their commissary to see if they have some.

Ichiban has REALLY good sushi. A buddy of mine from Florida said it's the best sushi he's ever had. He grew up in FLORIDA!!! I couldn't believe it.

Another place is Coco Palace but I got kinda sick after eating there once so I'm afraid to go back.

Hana has really good sushi and okonomiyaki.

For prime and crab go to Silverado in Deadwood. The best fillet in Rapid City is Delmonico Grille... hands down.

I usually pull mine when it hits 130, for medium rare. Then let it sit for at least a half hour, but up to two hours (it'll still be warm).
