We have a signed contract on our home we are the sellers, we are having difficulty finding a place to life now within the confines of the settlement date. Is is possible to change the settlement date.

It is if the buyers agree to it. There may be complications relating to their financing, too. You may have to offer an incentive to induce them to wait. For example, you might offer a home warranty, a price reduction, etc. Talk with your agent who can try working something out thru their agent.

Yes, if you both agree. But it's best not to introduce complications to your transaction. You agreed to a date, stick to it, even if it's inconvenient for you. For a lot of sellers, they'd gladly trade your moving problem for their stale listing that still hasn't sold, so be grateful for your circumstance and just take care of business.

If someone were to ask me, "how can I get my real estate transaction to start getting weird and possibly fall apart?", I'd say the best way would be to start trying to change things, especially closing dates. Unintended consequences almost always result.
