Silver Pearl Hinode medium grain rice is the only kind my wife uses when making her pudding it never gets hard after being in the fridge for a few days. Make sure you use enough water to cook the rice.
She also uses roughed up cinnamon sticks in the pudding while its cooking.
2 cups coconut milk
2 cups milk
3 tablespoons white sugar
1/2 cup Basmati rice
1/4 cup raisins
1/2 teaspoon ground cardamom
1/2 teaspoon rose water (optional)
1/4 cup sliced almonds, toasted
1/4 cup chopped pistachio nuts
Bring the coconut milk, milk and sugar to a boil in a large saucepan. Add basmati rice, and simmer over low heat until the mixture thickens and the rice is tender, about 20 minutes.
Stir in the raisins, cardamom and rose water, and cook for a few more minutes. Ladle into serving bowls, and garnish with almonds and pistachios.
When I am lazy, I just put 4 cups of milk, the sugar and rice in a slow cooker and let it cook slowly, keep checking. At the end I make the consistency the way we like it...thin or thick

Rice is like any other food product...it dries out. and has a shelf life.
How do you keep pizza fresh and hot the next day? some items are made to eat their and then.
I can't think of many people that can bring back a 6 hour old hamburger to hot and juicy.

when I was a waitress, one of our desserts was rice pudding, and it kept in the refrig for a few days on end...I'm going to be as insulting as your post....
what do you think, I was going to keep it in the refrig for a year?

And come to find out that there is an ingredient that hardens when being chilled regardless of time. I for one am glad she posted this thread, I would have continued to use long grain and being frustrated. I am trying the short grain tonight and will post results tomorrow if it works.

thanks momofthree, I would have never guessed....I don't know what grain I used when my son was little, but used to make rice pudding all the time, and it lasted for a few days in the frig or when ever it all got eaten... but never once, then, did the rice get hard? But then I baked it in the oven for hours...so, maybe it has something to do with how long we cook the rice. I know some people use left over rice...? Let us know and thank you
Speaking of rice: I have a question and it isn't related to rice pudding, but rice in general. Lately, just in the past few months, I have noticed our rice is really gummy. I think it may have something to do with my rice cooker. It is very old. I got it when my dad passed away and my step mom moved into a retirement community. That was back in 2000. I know the rice cooker was at least 3 or 4 years when I got it. I did switch to Jasmine rice, but that was about a year ago.. Does anyone have any ideas? I have been cooking for over 60 years and never had a problem like this.

well, I'm not an expert, but do know that it gets gummy possibly when it is overcooked? I don't have a rice cooker, just cook it the traditional way and remember my mom saying, never ever stir rice, b/c it makes it sticky when you do..?
