Zucchini Gratin
2 tbl butter or coconut oil
3 med zucchini, cut into 1/4" slices
1 red onion, finely chopped
2 cloves garlic, minced
1 tbl chopped fresh thyme or 1 tsp dried
1/2 c heavy cream or canned coconut milk (I used light)
1 tbl coconut flour
1/2 tsp sea salt
1/2 c shredded Romano cheese, divided
1/2 c ground golden flaxseeds
Preheat oven to 450. Grease a 2-qrt baking dish.
In a large skillet over medium heat, melt butter or oil. Cook zucchini, onion, garlic, and thyme, stirring 5 min., or until tender-crisp.
Add cream, coconut flour, and salt..cook 5 min. Stir in 1/4 c cheese.
Place in baking dish, sprinkle with flaxseeds and remaining 1/4 c cheee. Bake 10 min or until golden brown.
