We had a craving for sloppy joes tonight, but are underwhelmed with the common canned version.
Do you make it from scratch? If so, what's your recipe?

We make it from scratch and use ground turkey. It's more of a "What do I crave right now?" - sometimes it's a sweet chili flavor, other times it might be more of an Italian flavor. Start with tomato sauce, a bit of tomato paste, some brown sugar, onions, bell pepper, garlic, black pepper, and salt.

We never use the can version. Here is what we make, I hope it makes sense to anyone but me!

1 to 1 1/12lb ground beef
1small vidalia onion, chopped
2 celery sticks with leaves, chopped
1(28 ounce) can crushed tomatoes
1/4 cup ketchup or chilli sauce or sweet baby rays bbq sauce
2tbs brown sugar
1tb cider vinegar
1 tb Worcestershire sauce
1 tb steak sauce (we use lea and perrins)
1tp garlic powder/salt
A squirt of mustard or two
Paprika, a shake or two or three

Brown meat, celery, onion, and drain. Add the rest of the ingredients, mix, and simmer, uncovered for 45 minutes, an hour, basically until it is as thick or thin as you like it.

Sloppy Joes
3 lbs hamburger
1 cup onions
1 tablespoon garlic...brown that together

Then mix
1 1/2 cup ketchup
1/2 cup green pepper
4 tablespoon vinegar
4 tablespoon mustard
4 tablespoon brown sugar
4 tablespoon worchestershire sauce
3 tablespoon chili powder












I do this in the crock pot for a few hours and its delish!!!

We do it a bit more savory. Like others said, it can also depends on what's in the pantry and what we are in the mood for. But the base is usually the following:

A can of tomato sauce
A few squirts of tomato paste (i keep a tube in my fridge, I guess it would be about a tbsp)
Small onion chopped
Couple of garlic cloves, chopped
1/2 cup of diced red/yellow/orange pepper (i keep mine in the freezer in baggies)
A few shakes of onion powder
A few spoons of brown sugar
A few dashes of worcheshire sauce
A few spoons of mustard, I usually have stone ground.

A pound of turkey
1/2 cup of chicken stock
Splash of Apple Cider Vinegar

I saute all up to the turkey for a few moments then crumble in the ground meat. Pour in the stock/vinegar. Stir through and let it cook down for about 30 minutes or till the liquid has evaporated to the consistency I like. At this point is when I will taste and adjust the flavors by adding salt, a bit of honey (that way it isn't grainy if I used more brown sugar), a bit more vinegar and hot sauce.
