Okay,

I'll start. I wanted something to eat that didn't include wheat bread. I bought the ingredients for pizza earlier, so I brought some rice and vegetables to a boil, added the pizza ingredients, except for the tomato sauce, and I had a tasty casserole. Here is the recipe:

1/4 cup cocktail shrimp
2 mozzarella sticks
1/4 cup pepperoni
1 cup frozen vegetables

Directions:

Bring the rice and vegetable mixture to a boil and let stand until the rice and vegetables are tender. Toss in mozzarella sticks, shrimp, and pepperoni. Simmer for five to ten minutes until the cheese is melted, the shrimp is pink, and peperoni is warm. Spoon into a bowl and serve. It makes three servings.

Leftover taco meat over leftover rice or a baked potato. Top with a little cheese, sour cream and scallions and a tasty quick meal.

That sounds pretty good. Do you put taco seasoning on the meat and rice?

You know how you make the taco mix (ground turkey/beef, etc. plus the seasoning packet) for tacos, I just use the meat mixture from that.

I like making an egg salad with some canned salmon and green onions, good to throw on a sandwich too.

There is almost no end to things that go well on a baked potato...learned this trick traveling around the UK. Look up "jacket potato" for inspiration. My favorite was Coronation Chicken.
