I made this the other night for dinner. My mom usually makes it, so I made it. The only thing was, the recipe called for parsley. We didn't have parsley; I used Italian Seasoning and oregano instead. If I had to do things over, I would have probably added more of those seasonings... but I'm not sure how they compare to the taste of parsley. Enjoy!

Mafalda Lasagna Casserole

3 cups spaghetti sauce
1 package (12 oz.) San Giorgio Mafalda
3 ¾ cups (2 lbs.) ricotta cheese
1 egg
1 Tbsp. oregano flakes
¼ tsp. Italian seasoning
½ tsp. salt
½ tsp. ground black pepper
2 cups shredded mozzarella cheese, divided


Cook pasta according to package directions. In a large bowl, stir together ricotta cheese, egg, oregano, Italian seasoning, pepper, and salt. In a 13x9x2 inch baking dish, spread 1 cup spaghetti sauce; evenly layer one-half pasta over sauce. Spread ricotta mixture over pasta; sprinkle with 1 cup mozzarella cheese. Repeat layers of sauce and pasta. Spread remaining sauce over pasta, covering pasta completely; sprinkle with remaining mozzarella cheese. Cover with foil. Bake 30 minutes. Remove foil; bake for 4-6 minutes or until hot and bubbly. We cook this with the homemade meatballs and sausage. It gives it more flavor. Makes 8-10 servings.

Google says, "Mafalda is a flat ribbon pasta, similar to a narrow lasagna, cut into bite size lengths."
Google also says that San Giorgio is a brand name.

Yep, mafalda is similar to lasagna, but much smaller. It's really good. And use, San Giorgio does make it - I wasn't sure if I could post brand names or if other companies made mafalda.

What would be the point of using instead of regular lasagna?

As compared to regular lasagne noodles, which produce an end product that needs to be cut like a pie or a cake, Mafalda would make a lasagna more like a casserole, requiring a spoon.

Hmm... well, we make Mafalda a bit differently than lasagna. It's also smaller, so it's nicer. But as lubby said: something different.
