Here is the situation: we are going to granddaughters for Christmas eve and she is fixing our typical Christmas dinner: Chile and tamales; other granddaughter is bringing queso and chips and there will be the typical spread of cookies and candy. I would like to bring something that is a little healthy. Of course I have thought about guacamole, but grandson in law will probably make it, he usually does, even though I don't like his. Not the Mexican theme, but I am thinking maybe something like fennel stuffed with blue cheese, cream cheese and fresh pineapple. Any other suggestions? I would like a green something without the carbs if possible. oh, one more thing: granddaughter eat anything with sour cream or mayo in it.

I don't see the blue cheese celery alongside that other stuff.

How about sticking with the Mexican theme and doing a riff on artichoke dip - http://www.foodnetwork.com/recipes/m...choke-dip.html or standard spinich and artichoke dip?

Seven Layer Bean dip is Da Bomb but usually reserved for Super Bowl.

A nice Mexican/SouthWest themed salad with a citrus based dressing like lime or grapefruit. There are all sorts of greens you could use.

Also a super refreshing jicama salad. Lots of options with this one.

I make a dip for cut-up vegetables from dill, mayo, and sour cream (I like more sour cream than mayo). Add S&P, and if you like, dried onions. I make this at least several hours ahead, generally the night before. As far as vegetables, you could make it as simple as just red and green peppers, but I like to blanch broccoli and snow peas, too. And you can cut up some jicama. Really, whatever you like. Looks great on the table, too.

And you don't have to limit yourself to dill. You could add basil and parsley, also. I use either fresh or dried dill (dried works very well), but fresh only for basil and parsley.

What about some fruits like papaya, mango, pineapple and peaches served with that chili/lime seasoning that you sprinkle over it?

If I were shooting for low carb, I would just take a cheese and meat tray. A couple kinds of salami, beef log, cheeses, and if you feel like it, you could wrap some prosciutto around some melon slices. Throw in a box of crackers and call it a day.

love all the ideas. Daughter told me to stop stressing over it and if Erica doesn't like mayo or sour cream she can just eat something else. I had thought about the 7 layer and also just fruit or veggies. Yes, the artichoke/spinach dip crossed my mind. Well, here is what I ended up making: I did the artichoke/spinach dip with veggies and I did mini lox and bagels: well not really, but I make a cream cheese mixture with cream cheese, onions and dill. Will spread on toasted baguettes and topped with smoked salmon. OK, not very Mexican, but it will work.
