Ok, I LOVE to try new new recipes, and when I found this one I thought the name odd, but with almost 2000 POSITIVE reviews raving about it figured I had to try it....so made it tonite.

My DH, who is a serious foodie, LOVED it!!!! He did not stop raving about it until he went to sleep tonite, so figured I would share:

6 chicken thighs (I used bone in, with skin, but you can do boneless or skinless too)

1/2 cup Dijon mustard
1/3 cup maple syrup (the real stuff, but it said you can use honey too for the carmelization factor...(PLEASE DO NOT use the maple syrup wannabe's)
1Tspn rice wine vinegar

Mix the top 3 items together with a wisk, and take your chicken rinsed, patted dry and placed in a GLASS baking dish

Salt and pepper chicken as desired

pour the mixture over the chicken in the pan and let it marinate in the fridge for at least 4 hours

Preheat oven to 425. Bake for 45 minutes (or until 165 internal temp with meat therm) basting at the 20 minute mark with the juice in the pan.

OMG! While this sounds CRAZY, it was SOOOOO good!!!! NOT sweet at all, the mustard gives it such a tang, but you can not put your finger on what the taste is.

I served it with a very simple spinach salad and my hubby LOVED it.

Hope you try it and like it as much as we did!

PS...the original recipe said it was great for pork chops as well....will have to give that a try!

Me three on the smut factor.

And I was kind of disappointed.

I'm going to try this recipe anyway. It doesn't sound like something I'd even think of trying -- I don't like sweet chicken -- but since you said that it's NOT sweet and that it was FABULOUS, I'm going to give it a whirl. Thanks for posting it!

2 Questions:

1. Is there any mustard flavor in it once its mixed? DH claims to hate mustard and wont touch anything if he has a suspicion of mustard being in it.

2. Is it possible to substitute the rice wine vinegar for apple cider, red wine vinegar, or white vinegar?

I have the chicken thawed, but no rice vinegar on hand.

Yes, on some of the reviews folks stated they had to substitute apple cider for rice wine vinegar and NO, you can NOT tell there is any mustard, but be sure you are using the Dijon mustard (I used Grey Poupon in mine).

They also said you could substitute honey for the pure maple syrup (but I was able to follow the directions exactly having everything on hand). The ONLY thing I changed, was I forgot to add the fresh rosemary before serving, but can not believe that could have made the dish that much better than it was....just so dang tasty when I pulled it out of the oven!

One question, did you bake it with the marinade or drained the marinade and then baked it?
