The purists? There is no such thing as a "right" way to do it. You can use any filling you like and any sauce you like. As for the sauce that could be anything you like as well. Green, Red etc. Made from tomatoes, dried chiles, powder or whatever. You could also use a mole sauce.

Well, I have been lambasted by people for my variations on traditional favorites like enchiladas or chili.

Hadn't thought of a mole sauce! I HAVE thought of using butternut squash though. The sweet potato is just less hassle - it cooks partially in the microwave in 3 minutes and then I dice it up and brown it with the other veggies. Butternut squash would be tasty - I will try it one day when I have more time.

I just finished the last of my frozen enchiladas stash, so I'm gonna have to make more fast! LOL
