This morning I made this recipe for our pancakes. It was sooooo good but a bit too thin. How can I thicken it up a bit? maybe less water? more pumpkin? I'll serve this syrup over a coffee cake I'm making for Sunday morning brunch.
This is from All Recipes which is my favorite go to source. I get new recipes from them every morning in my email.

PUMPKIN SPICE SYRUP

• 1 cup light corn syrup
• 1 cup water
• 1/2 cup brown sugar
• 1/2 cup butter
• 1/3 cup pumpkin puree
• 1 teaspoon ground ginger
• 1 teaspoon ground nutmeg
• 1 teaspoon ground allspice
• 1 teaspoon ground cinnamon
•
1. Bring corn syrup, water, brown sugar, and butter to a rolling boil. Whisk pumpkin, ginger, nutmeg, allspice, and cinnamon into corn syrup mixture; cook, stirring constantly, until flavors blend, 5 to 10 minutes. Serve hot.

It's really good and very sweet. DH said it was like having dessert for breakfast. Hope you and your family like it.

Yes, I'd try a little less water and a bit more pumpkin. Maybe some cornstarch?
