That sounds good. I feel like I want to put some mussels in there too. I'd remove the shrimp after sautéing and cook the mussels in the wine step.

I remember Mario Bitali saying grated cheese does not belong on fish dishes. I have to disagree to some extent. I personally like grated cheese on pasta dishes with shrimp in them.
