I was wondering if anyone else rubs the toasted bread with raw garlic before adding the topping? Some times I just rub with raw garlic and smear with a cut fresh tomato with no other toppings except a good finishing olive oil and maybe a sprinkle of sea salt.

Always. It's part of being bruschetta, getting rubbed w/garlic.

Almost always. Exceptions occur depending on what's going on top.

For example, I purchase that delicious pate/mousse with truffles at costco. No garlic on those crostini, please.
