I haven't been able to find a good all-purpose cassava flour blend recipe. I just got a large bag of cassava flour and I would like to use it. The few I found use almond flour, which I would like to avoid. (Because I don't like it)

Also feel free to suggest recipes that use red bell peppers. I just got a few huge ones for $.33 a piece. I'll want to use them up soon..

Roasted red peppers. Not a recipe but two great ways to use them over a period of time.
Peell, get rid of seeds, freeze in little bags. Or put them in jars with olive oil and a few crushed garlic cloves.

I've never used casava flour. I use a lot of tapioca flour, but that can't be used all by itself, it has to be blended. The simplest blend that I use tapioca flour in is a blend of tapioca and finely ground brown rice. I use that one to make cakes. If I remember to do it, I'll look up the proportions and get back to you with that.

I don't like almond flour in gluten-free blends. I like almonds, but the flour does not absorb fats or liquids well. In addition, it is too expensive.

Red bell peppers are good fire roasted. After they are roasted they freeze well. I like a few slivers of fire roasted red bell pepper in a green salad or on a pizza.

Without fire roasting, you can use diced red bell peppers and diced onions in the crock pot with a beef roast or a pork roast, or you can fry them up with hamburger and make tacos with it.

I ended up making stuffed peppers. They were alright; not the best recipe I've used.

I'm now looking for a recipe for sugar free cassava flour peanut butter cookies.. I would like to use stevia, but honey will work too. Everything either calls for sugar or are flourless.
