I am planning on making a shrimp bisque for the first time. I have found several recipes that contain brandy and/or sherry. Which is better to use - brandy or sherry or both?

As long as there's lots of heavy cream; it really doesn't matter. If I had to pick one; sherry is probably the more traditional.

I wouldn't bother with either one. Shrimp is flavorful enough on it's own. But if I had to use one or the other, I'd go with sherry, too.

I've had it with sherry, so I know that's good. I've never had it with brandy.

I've had it with sherry as well. To me that seems the more common or popular choice.

I would have said Sherry right off the bat, but you got me curious about the brandy and so I started poking around. I was surprised to find so many recipes! Cream and brandy do go well together. I wouldn't use both, but pick one. They're both bound to be good, the brandy the more unique choice.
