My daughter isn't a fan of green bell peppers either (but likes them when they turn red) and she says they are tolerable if they are finely minced and sauteed with onions and used in a recipe, preferably something with tomatoes in it, chili, meatloaf, spaghetti, etc. Of course her ratio of bell pepper to onion is roughly 30/70 so that helps too.
If you like cucumbers you might try a dish of diced and marinated cucumbers, onions, peppers and tomatoes. I like to use a simple oil, vinegar and sugar marinade overnight. I find that the the cukes, onions and sugar take the edge off the taste of the peppers, pickled peppers if you will.

I dislike them cooked into things, because the flavor is overpowering, yet I still put them into some things and I don’t mind it. So, I’m not sure what to say.
I can like them raw...no problem.
I make a sweet and sour meatball dish with pineapple and green pepper...fine and dandy, but in this they are just barely tender, not too cooked.
I make sloppy joes with green pepper with no issues.
My favorite Mid’s spaghetti sauce is italian sausage with green pepper.
YET I also hate green pepper. Go figure.

My advice is, if you don’t like it, don’t eat it, but there might be a middle ground.

I can't stand the taste either and find they overwhelm a dish. Husband won't eat them. Simplest solution would be to just throw them out. I hate to waste food, but when it's something you really can't stand or it makes you sick, just get rid of it.

Not sure why people just don't get it that some folks don't like some things - Personally, I'll eat raw peppers (red and green we are talking about) - but not cooked.

One word, gumbo! Green bell peppers are part of the "Trinity" and you won't even know they are there.

Thanks everyone! I was hoping for some trick to get rid of the bitterness. Sigh....I guess there is none. I think donating the ones I have and canceling my subscription is the best and I guess only solution.

Also if they are very bitter I can't help wonder if they are very unripe, the misfit site does say some of their items may need a few days on the counter. Any luck with attempting to get them to go slightly red?
