For frying....want to make a big batch today - do you prefer to cook them first, and then freeze them, or just do the breading and then freeze them to be cooked later?

I Bread & Freeze

I pat dry the Cutlets with paper towel, sprinkle lightly with Kosher salt
then flour, egg wash, breading.

Wax paper on a small sheet pan and into the freezer until hard, then I
wrap them individually with freezer paper and place into a Zip-Loc freezer bag.

Before frying, I'll place them on paper towel for four min. turning over at the
two min. mark to ensure no crystals make it to the fryer

Sounds interesting, I'll try to write it as you did.

If you freeze then cook later, don’t use and egg in your wash.

Care to expand on this

I've not had anyone take a dirt nap or become ill because of this.

I personally prefer to freeze them to cook them later when I need. for me, chicken cutlets seem to be more tasty this way... or maybe is just a placebo effect
