One of my favorites is Vegetarian Times: https://www.vegetariantimes.com/ May be an obvious suggestion, but I have been happy with most everything I get from there.

These days any mainstream recipe site will have plenty of vegetarian options.

I'm not veggie, but I like to seek out cuisines that have great options: Indian, Ethiopian, and Medditeranean/Middle Eastern are good for me. Packed with flavor so you don't feel like meat is missing.
