I recently made my own. Came out better than the boxed stuff which I had bought about a month ago because I had not had it in years. it was awful.

1 1/2 cup long grain rice ( I used Jasmine and it came out fine)
1 cup vermicelli pasta broken into short peices.
1 Tsp of onion powder
1 Tsp Garlic powder
1 tsp salt
1 tsp black pepper ( I left it out)
3 Tbsp. salted butter
1 Tsp chopped fresh parsley
4 cups chicken broth

Sauté pasta in butter for 3-5 minutes or until golden brown, add Rice and cook 1 minute more. Add seasonings and broth (heat is on medium high) bring to a simmer and turn heat to low. Cook 20 minutes or until all liquid is absorbed, garnish with fresh parsley. you can do beef broth instead if you want a beefy flavor or vegetable broth if you are vegetarian.

I plan to make this again. it's a keeper!

sounds like a good way to make something similar to Rice A Roni, but I will stick to the box stuff when in a hurry. It has always been a go to for me.

I love Rice A Roni. It's quick, easy, inexpensive and tastes good. It also makes a great side dish for almost anything. I have no need to reinvent it, but I realize that's just me.

I will use both, sometimes I like a box mix, as it is so easy & I also like to make my own.

I had the boxed mix and it does not even compare to this homemade version. I have made it 3 times so far. It really does not take that long to make.

I used to do this when my kids were little and we were poor. Or when I was too busy, lazy, or tired to run to the store to pick up a box of rice-a-roni.

I always make my own. It's not like the box makes the dish any easier to make. You still have to provide butter, brown the vermicelli, and boil the rice.


I used to us a dry soup packet. Mrs Wright's chicken noodle soup, I think it was called, that had just the right amount of vermicelli and a wonderfully flavored bouillon soup powder. It was a lot less expensive than buying a box of rice-a-roni, and it tasted even better ( I'm not complaining about the taste of rice-a-roni; I think it is delicious)


No wait. Mrs Wrights is the silver cream I use. I guess I don't remember the name of the dry soup.

Orzo, basmati ratio 2:1, homemade gelatinous chicken stock, onion, garlic, a hot pepper or two and a dash of salt.
