Stuffed green peppers, are to me, a dish that has no set recipe, it is fun to mix it up & wing it. However I also agree with Kjg, sometimes I get the stouffers frozen ones, for an easy night.

I use pepper halves (as opposed to cutting off the top). I briefly boil them, stuff them with beef, garlic, onion,Italian herbs, rice, and top with spaghetti sauce (I use jarred Bertoni Organic sauce) and top with mozzarella and parm. Then I broil in the oven until the cheese is melted.
I almost never make them, but when I do, I just use my standard meatloaf recipe. No tomato sauce. Bake them covered until the meat is cooked through.
I've never heard of sauce on stuffed peppers. That's a new one to me.
I've stuffed those little mini bell peppers and that is good. Those little mini peppers are really tasty.
Stuffed peppers around here are much more likely to be chilies rellanos that are just stuffed with cheese.
That is funny, that you have never had peppers with tomato sauce. I’ve never heard of them otherwise.
