I used to order this at a small German restaurant in Frankfurt am Main. They'd bake a head of cauliflower with thin slices of ham and cheese draped all over it, and serve with a side of Salzkartoffeln (salt potatoes). German cauliflower heads were not that large, so this was a one-person serving. We loved it so much, we learned how to make it.

Nowadays, we skip the potatoes and do it the easy, fast way:

1 bag (four â…” cup servings) riced cauliflower
12 deli slices turkey ham or ham, diced
1 cup shredded cheese (we normally use cheddar)
Seasoning to taste
4 deli slices cheese (swiss, provolone, whatever)

Microwave the bag of riced cauliflower as directed. Drain off any excess liquid. Place in lightly greased casserole.

Stir in meat and shredded cheese, add seasonings to taste. Top with deli slices of cheese and bake at 400 degrees for about 15 minutes, until cheese on top is bubbling and a little browned.

Let sit five minutes, so the cheese isn't at lava temperature, then serve.

Makes two servings as a full one-dish meal, or four servings with sides.

Total carbs for one-dish meal: 8g per serving, 4g fiber. Net carbs: 4g

Over the years, this has become one of our favorite go-to meals. Now that we both have to limit carb intake, it's become our favorite meal.
