Does anyone have a great Bruchetta recipe? I had this once at a Sports Bar in South Carolina and have been unable to duplicate or come close to the taste. Any suggestions? Thanks Angie

It's usually chopped tomatoes/oil/herbs/spices, what did the one you had taste like?

Some of my favourites are tomato , basil and mozarella and creamed garlic mushrooms with blue cheese. The combinations are endless though... The garlic Borlotti beans ones with Parma ham are gorgeous too .

It did have a tomatoe base with a white chesse, garlic etc. Sounds like I just need to experiment!

Bruschetta comes from Italy and the original basic recipe is very simple. You grill or toast a slice of nice bread then take a clove of garlic and grate it/scrape it right over the bread. Finally you season it with some salt and olive oil.
This is still a nice snack for Italian children.
If you want to add the tomato you can just cut a tomato in half and just like with the garlic, spread it over the bread or you can add fresh tomato pulp.

With time many people have added to the original recipe and you can get some really yummy variations.

chop tomato
mince garlic
chop cilantro
salt
evoo
oregano
chopped frsh basil
mix all together

slices of italian or french bread, with garlic and oil, lightly toasted

that is Bruschetta

Okay, so I need to make bruchetta for 25-30 people. I've made it at home and it's turned out well. BUT....making it for 25 scares me. I thought maybe I could make two or three different variations. Nothing too out there. My fam likes me to throw in some capers, but I'd like to go traditional for two of the three batches.

My alternative is to go to Whole Foods, but I'd rather not go store bought. Or at least not for all of it.

How far in advance can it be made and still be good?

And what would be a good second appetizer? Needs to go well with wine.
