Try looking on the internet for "Ma po tofu". Its a classic spicy Chinese tofu dish and one of my favorites. Also, my mom made tofu and spare rib soup with spinach leaves a lot. Essentially, you just boil the ribs for a long time (3 hours?) until all the savory scents and flavors of the meat has come out into the soup. add salt and pieces of cut up tofu, and a minute before taking it out of the pot, add a few spinach leaves---very refreshing soup!
Here's another one: that Japanese friend of mine who I referred to in the sushi thread, prepares what's called buta-tofu. Essentially, pork and tofu in a miso sauce. It was great!
I looked for a recipe but the only one I could find quickly is this one which is more elaborate than my friend makes but it sounds good too. My friend, I think, just uses pork, tofu, onions, the miso, and perhaps there was something else but I can't quite remember right now.
My friend is filipina and she has always just used it as a replacement in just about any stir fry. The firm Tofu of course. It takes on the flavors of whatever seasonings or sauce you use.
Sounds like you might not be into Asian cuisine, Rapture. But if you are, both those dishes (ma po, and buta ...or even Smerky's mom's soup) would still be good ...just leave out the pork.
Yea, my mom often leaves out the beef in our ma po tofu dishes when she's lazy:P As for the soup she makes, you can substitute the pork spare ribs with mushroom--making it mushroom/tofu/spinach soup. The key thing about the soup is to make it have a savory flavor and scent Good luck!
If you have a Asian grocery store near you, there's mabo tofu sauce in a package. I don't know how healthy it is though so that may not be a way to go. Any kind of broth-based soup that you make (or you can also find in Asian grocery stores) you can add soft tofu to it. You can also eat it raw or dip it in soy sauce or oyster sauce. Like someone said, tofu soaks up the flavor of whatever sauce you use so be careful not to over-do it!
Oh yeah, you can get hot & sour soup packages at the grocery store, too and add tofu to it. Stir-fry is a little harder to do b'c the tofu is really soft! Good luck! If I find anything, I'll let you know. I'm a horrible cook and only get to eat yummy tofu dishes when I visit my mom (which coincedentally I am doing right now!)
use it in place of cheese to make tofu lasagne or manicotti (use it as the main ingredient, there's a great recipe for this in PETA's Compassionate Cook cookbook)
cut it in slices, roll in bread crumbs and back for 15 minutes to make tofu nuggets
use it to make tofu salad (egg salad without the egg)
use it in stir fries
All sounds good, I'll try them all. Any brand in particular?
