I won't even try to go into the complicated details of him and I but we both like each other a whole lot, we say I love you, spend nearly every waking moment together.
It's his birthday today, I want to do something or get something romantic but not overly romantic.
I already got him Gran Turismo 5 and a birthday card with a heartfelt written message, which he is getting later tonight, once I am off work.
I also got him headphones and an iTunes card, which he is getting at his surprise dinner I planned with his family on Friday.
Tonight we are going over to a friends house to drink and have some fun, we're crashing there and I brought my playstation so he can play his game.
But besides gifts and material things, what is something romantic and sweet I could do for him?

In all seriousness, he'll be thrilled for everything you're doing, for the restaurant idea, try to think of his favorite food or favorite type of food and get something that specializes in it, doesn't have to be expensive or anything but it shows you put some thought into it. Maybe call ahead of time and pre-order a cake to be sent out after or something.

I did this once. I took 4 small boxes that ring boxes go into and in each one I put something that represented Love, Laughter, Luck and something else. Each had meaning to the word and to the both of us. Like for luck I put this casino chip in it from a really funny night we had at a casino. I used to refer to him as a certain superhero (long story) and I happed to find this little car with the face on it like it was driving and I shrunk a picture of his head and pasted it over the driver - that was for fun. For love I think I put rose petals from the first time he ever gave me flowers 10 years earlier...you just have to find things between the two of you that make sense.
I am practically jumping out of my seat right now I am at work for another 20 minutes and I get to go over to the friends house right after this and I am so excited.
I can't wait to see everything play out.
I just want him to be happy, I want to see him smile that smile of his, where he just looks so high on life and like nothing is wrong. Seeing him smile is all I need, it makes me so happy.
The next now 17 or so minutes is going to kill me!!

Something more intimate and personal would mean more....and they should remember it for a long long time. Material items are over rated, unless the you guys are very young. Do something special, forget about the department store gifts
Take him out to dinner, get a few drinks in him, come home, have a "romantic evening" or whatever it's called. Some men still like that stuff, especially if they think there's a chance of getting some at the end.
Make it good, and it'll be something he always remembers.
